Recipe: DIY Short Rib Avocado Basil Wrap

As a working professional, I'm always seeking easy and nutritious recipes. I enjoy working out daily and eating meals high in protein to ensure I stay in shape despite having a full-time desk job.

I also gear towards the lazier side of things - I do not try to follow complicated or time consuming recipes. As a result, I like to brainstorm new meals based on what is already in my kitchen.

I came up with this Short Rib Avocado Basil Wrap when debating what to eat after my morning run today. It's extremely easy to make and - surprise! - all the ingredients can be found at Trader Joe's.




Short Rib Avocado Basil Wrap

Serves: 1

Ingredients




















1 - Whole Wheat Tortilla (found in the bakery aisle of Trader Joe's)

2- Half of an avocado




3- White Bean & Basil Hummus (Brief review: if you are a basil fan, you will love this hummus! It is creamy and rich in basil flavor.)




















4- Trader Joe's Bool Kogi Korean Brand Sesame Marinated Boneless Beef Ribs (found in the "Butcher Shop" aisle). Brief review: I really like Trader Joe's marinated meats, especially the Korean "Bool Kogi" product line. At $6.99 a pound, each package can serve up to 3 people. It's extremely quick and easy to prepare, not to mention delicious. It looks like this.


Steps
1. Heat the wheat tortilla in the microwave for 15 seconds. You can also toast the tortilla in a mini-oven.


2. Spread the tortilla with White Bean & Basil Hummus. Feel free to use as much as you desire!


3. Cut avocado into slices and place on top of the tortilla and hummus.


4. Grill Boneless Beef Ribs according to preparation instructions on package.


5. Place beef on top of the hummus and wrap.

Excuse the faint blurriness on this picture. The steam from the hot meat was fogging up the lenses. :)

6. Voila! You have a delicious and healthy wrap.



I like to eat this wrap as if it were a taco, but of course, you can wrap it up and eat it as a burrito, etc.

The great thing about this recipe is that you can make as many wraps as you desire, since you already have the entire container of hummus, tortillas, and meat! If you want to make more than one wrap, simply purchase as many avocados as needed.

You can also serve on crackers as an appetizer or snack.




I enjoyed my wrap with a cup of Matcha Green Tea. My favorite tea is Kirkland's - around $15 for 100 bags of green tea.
